A JOURNEY INTO THE WORLD OF CHOCOLATE
“Food of the gods” – yes, that is the original meaning of the scientific term for the cocoa tree.
The word Theobroma cocoa may let us guess the fascination of chocolate which spread out over Europe in the 16th century more and more. Thousands of years before, 1,500 before Christ, the cocoa tree was used for the first time – by a folk that lived in the lowland of the Mexican Golf Coast. It finally took until the 16th century as the cocoa beans came to Europe for the first time. The conquistador Hernan Cortes brought them to Spain from where cocoa spread throughout Europe – initially as a drink and as a medicine.

How are these nuances defined?
In general, we are differentiating between three types of chocolate: white, milk and dark chocolate. White chocolate consists of cocoa butter, sugar and whole milk powder. Milk chocolate with 35% cocoa consists of cocoa mass, sugar, cocoa butter and whole milk powder refined with vanilla. Content of the fine dark chocolate with 70% cocoa mass is cocoa butter, sugar and vanilla.
A whiff of banana, coffee and black tea in the dark chocolate? Or soft fruity notes of Cassis? Do you recognize the smell of caramel, cinnamon or walnuts in the milk chocolate? Or are you feeling the scent of vanilla and flowerhoney in your nose when you are enjoying white chocolate? It doesn’t matter what you like most, the world of chocolate definitely has a lot to offer. There are no limits for the creative enjoyment.
