Like a summer breeze
A tender shell, a gentle crack, a creamy delectation. Pavlova has many appearances. Our Pavlova is airy like a summer breeze with a fruity taste. Completed with finest organic dark chocolate – so tasty and unbelievable pretty in its imperfect way.
Time required: 90 Min. Cooling time: 2 h Recipe for 6 - 8 Pavlova
Ingredients:
- 2 egg whites
- a pinch of salt
- 100 g sugar
- 1 tsp starch
- 1 vanilla bean
- 100 g curd cheese
- 100 g cream
- 30 g icing sugar
Possibly 100g melted organic dark chocolate from Berger Feinste Confiserie
Decoration:
- 150 g fresh berries (blueberries, raspberries, red currants)
- Organic cocoa nibs from Berger Feinste Confiserie
- Organic dark chocolate from Berger Feinste Confiserie
Preparation
Preheat oven to 110 °C and line a baking sheet with baking parchment.
Beat up the egg whites with a pinch of salt and slowly add the sugar. Continue to whisk until the sugar is completely dissolved.
Carefully fold in 1 tsp of starch and the vanilla.
Use a tablespoon to form 6 – 8 equally sized nests onto the parchment paper (in case you would like to add extra chocolate you can also mix it with chocolate). Let the little Pavlova dry in the oven for about 70 minutes. Open the oven door from time to time to let the steam escape. After drying let the pavlova cool completely.
For the cream whisk together curd cheese, cream and icing sugar and top the Pavlova with it shortly before serving. Use berries, organic chocolate and organic berries as decoration.
